You cannot stay in the Midi without succumbing to the multiple flavors of Mediterranean cuisine. In an original and warm setting, discover the conviviality of the wine bar and celebrate the Languedoc terroirs through dishes and wines of regional inspiration: red, full-bodied and spicy wines from Corbières Muscat de Frontignan, passing by the white Picpoul fruits.
Discover the alliance between the bistro and an elaborate and refined local cuisine, with a slate whose dishes change according to the market and the season.
The wine bar open to all gives you the opportunity to taste the wines of our terroirs: Surrounding vineyards and Languedoc appellations: Picpoul de Pinet, Corbières, Faugères, Minervois, Muscat, Blanquette de Limoux – (local wines to discover. Do not hesitate to ask our teams where to taste them).
Restaurant opening hours:
– Lunch: from 12:00 p.m. – 1:30 p.m.
– Dinner: from 7:00 p.m. – 9:30 p.m.
– The restaurant is closed every Sunday and Monday.

Chef of the restaurant “Le Bistrot de la Distillerie”
“Native of Béziers, I honed my skills in the kitchens of the Pourcel brothers, as well as under the guidance of several Meilleurs Ouvriers de France (Didier Anies, Serge Chenet), and in several prestigious hotels (such as the Grand Hôtel du Cap Ferrat and the Hôtel des 3 Couronnes in Vevey, alongside chef Lionel Rodriguez).
I would describe my cuisine as indulgent and innovative. I am a proponent of cooking that respects the seasons and strives for minimal ecological impact.
To me, cooking is above all a story of passion that has fueled me since a young age, thanks to the family dishes I used to prepare with my mother during my childhood.”
